烹调步骤

第 1 步 – 准备和腌制鸡腿

准备鸡腿(400克)并将它们放入一个大的搅拌碗中。加入白胡椒粉(5克)、绍兴酒(10克)、盐(3克)、糖(5克) 、油(10克)和木薯粉(10克)。将它们均匀地搅拌在一起,用塑料食品包装盖住或密封后放在冰箱里隔夜。

Story

Honey chicken is a popular Chinese inspired dish. You can find this Chinese-style crispy chicken with sesame seeds in almost all Chinese restaurants and takeout in western countries. As a Chinese takeout staple, honey chicken is deep-fried, glazed in a sweet and savoury sauce made with honey and soy sauce, and topped with roasted sesame seeds. It’s usually served over steamed rice. If you love Chinese food, you will definitely fall in love with this simple and delicious dish.

  • 400g chicken drumstick
  • 5g white pepper powder
  • 10g Shao Xin wine
  • 3g salt
  • 5g sugar
  • 10g oil
  • 10g tapioca flour
Sauce
  • 1 tsp honey
  • 20g soy sauce
  • 3g black soy sauce
  • 8g sugar
  • 3g white pepper powder
Flour mix
  • 150g rice flour
  • 100g tapioca flour
  • 50g plain flour
Other
  • 20g oil
  • 2 cloves garlic (smashed)
  • A pinch of roasted sesame seeds (for garnish)

Cooking Steps

Step 1 – Prepare and marinate the chicken

Prepare chicken drumstick (400 g) and place them in a large mixing bowl. Add white pepper powder (5 g), Shao Xin wine (10 g), salt (3 g), sugar (5 g), oil (10 g) and tapioca flour (10 g).

Mix them together and make sure every chicken drumstick is coated evenly. Cover or seal them tightly with plastic food wrap and let them sit in the refrigerator overnight.

Marinating is the key step in this recipe as the flavor of seasonings will penetrate deep into the chicken during the marinating process. This is to ensure the inner part of the chicken is equally delectable.

Step 2 – Prepare frying batter

In a large bowl, add in Aunty Lau’s golden ratio of frying flour mixture: rice flour (150 g), tapioca flour (100 g), and plain flour (50 g). Then, combine the dry coating mix with the marinated chicken drumsticks.

Make sure they are coated evenly, you can add some flour if it is insufficient to cover all the chicken.

Step 3 – Deep-fry chicken

Heat up a wok and add some cooking oil. As soon as the oil is fully heated at 170c, deep-fry the chicken drumsticks in batches for 10 minutes until golden brown. As needed, flipping over once or twice throughout frying for even browning.

Tips: The oil temperature for frying should be kept between 160 to 190 degrees, so that it is easier to fry crispy.

Then, transfer the chicken pieces to a plate lined with paper towels to sock up the excess oil.

Step 4 – Sauce Making

In a small bowl, mix all the sauce ingredients including honey (1 tsp), soy sauce (20 g), black soy sauce (3 g), sugar (8 g), and white pepper powder (3 g).

Step 5 – Stir-fry everything together

Heat up the wok with medium heat, pour some oil (20 g) and add in smashed garlic (2 cloves) once the oil is fully heated. Stir fry the garlic repeatedly until it’s fragrant.

Then, add fried chicken drumsticks and the sauce into the wok, stir fry and toss them over medium-high heat until all chicken drumsticks are coated with the sauce evenly for 8 minutes.

Step 6 – Plating & Serving

Sprinkle some roasted sesame seeds over the top of the honey chicken.

Transfer to a serving dish and there you have it, the sweet yet savoury honey chicken is ready to serve!
